Brinjal Rice
Brinjal Rice is an easy to make lunch recipe. Make this tasty recipe in minutes and pack your lunch.
Brinjal - 250 grams
Coriander seeds - 1 tsp.
Cumin seeds - 1/2 tsp.
Dry chilli - 4
Turmeric Powder - 1/4 tsp.
Salt - as per taste
Oil - 3 tbsp.

Ingredients:
Rice - 1 cupBrinjal - 250 grams
Coriander seeds - 1 tsp.
Cumin seeds - 1/2 tsp.
Dry chilli - 4
Turmeric Powder - 1/4 tsp.
Salt - as per taste
Oil - 3 tbsp.
Method:
- Cook rice and keep aside.
- Clean and chop brinjal to cubes.
- Heat a pan. Add coriander seeds. Once it is fried add cumin seeds and dry chilli. Put off the stove.
- Grind the above to a coarse powder.
- In another pan heat oil. Add the brinjals and cook until the brinjals are tender.
- Add turmeric powder, a little water and salt and saute for 2 minutes.
- Once oil oozes out, add the ground masala powder and saute for 2 minutes.
- Now add the cooked rice and mix well.
