Corn Masala

A Special Thanks to our friend Kavitha Mohan for sharing her recipe with us. Make this spicy delicious curry in lunch or dinner with rotis, phulkas or naan.
Corn Masala

Yields:3 servings
Sweet Corn - 1 large
Onion - 1 large
Tomato - 1 medium
 Dry red chillies - 3
Garlic - 4 pods
Ginger - 1/2 inch
Oil - 1 tbsp
Cumin Seeds - 1/4 tsp
Cinnamon - 1 piece
Green Cardamon - 3 pods
Turmeric Powder - 1/4 tsp
Red Chili Powder - 1/2 tsp
Kashmiri Chili Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Water - 2 cup
Low fat/fat free yogurt or Curd - 1/4 cup
Fat free Milk - 1 tbsp
Handful of Cilantro / Coriander leaves

  1. In a pan or wok, add 1/2 tbsp oil. When it is hot add roughly chopped onions and fry until it turns translucent and changes color.
  2. Allow it to cool and grind sautéed onions, garlic, ginger, dry red chili adding 1 tbsp water into smooth paste.
  3. In the same pan add 1/2 tbsp of oil. When it is hot add cumin seeds, Cinnamon and green cardamoms. Allow the cumin seeds to sizzle.
  4. On a medium low flame, add onion paste and sauté for 3-4 minutes until it reduces in volume.
  5. Meanwhile grind roughly chopped tomatoes into smooth puree.
  6. Add tomato puree to the onion mixture and sauté for another 3-4 minutes.
  7. Add 1/4 tsp turmeric powder. Sauté.
  8. Add 1 cup of water and let it cook on a low flame.
  9. Add salt, red chili powder, Kashmiri chili powder, coriander powder. Stir and close the lid and let it cook for another 4-5 minutes.
  10. Add another 1/2 cup water and cook for 10 more minutes.
  11. Add corn and let it cook on a medium flame for 5-10 minute or until it cooks.
  12. Turn off the stove and let it cool.
  13. Now add yogurt, stir it and then on simmer cook for 5 minutes.
  14. Serve it hot with rotis or phulkas or naan.
