Easy Mint Rice
Mint leaves are rich in iron and there
is a saying that each mint leaf taken produces one drop of blood. This easy to
make mint rice will be a perfect lunch box recipe.
YIELD:
3 SERVINGS
Ingredients:
Rice – 1 cup (cook the rice)
Mint leaves – 1 bunch
Roasted gram dhal – 2 tsp.
Onions – 1
Green chilli -3 (small)
Ghee – 3 tbsp.
Cashews – to garnish (optional)
Salt – as per taste
Method:
- Clean the mint leaves, separate the leaves from the bunch and chop them.
- Chop the onions and green chillies finely.
- Heat ghee in a pan.
- Add roasted gram dhall and fry well.
- Add the onions and green chillies.
- Once the onions turn translucent add mint leaves, salt and sauté until it cooks well.
- Add cooked rice to this and mix well. Garnish with cashews roasted in ghee.
- Serve with raitha of your choice.
