Leftover Rice Cake
Leftovers are always tricky,we will be much confused of how to reuse that rice.Once I got lots of rice leftover and I do not want to warm up and use it again.Simply I decided to make some patties with other vegetables and spices.This is my ever favorite dish which my mom use to do sometimes.I simply modified this recipe to the healthy version by adding Oats and here is a great way to use leftover rice.
YIELD: 8-10 Patties
Ingredients:
Leftover
Rice-1cup
Crushed
Oats-1/4cup
Onion-1medium
chopped
Carrot -2tbsp
grated
Cabbage -2tbsp
grated
Raw
mango-2tbsp grated
ch illi
powder-1/2tsp
turmeric
powder-1/4tsp
cumin
seeds-1/2tsp
cilantro-1tbsp
chopped
salt-2/3tsp
oil for
frying

Method:
- In a large mixing bowl combine all the ingredients except oil and mix well with hand.
- Do not use water instead wet your hands and mix well until gets good binding texture.
- Now make lemon size balls of these mixture.
- Press the balls with the help of inner palm of your hands into thick disc shape patties.
- Heat the griddle/dosa tava grease little oil place around four patties and again apply oil,uncover cook for 5 minutes until golden brown.
- Flip it on the other side do repeat the above step.
- Repeat the same procedure for remaining patties.
- Serve this hot Leftover Rice Cakes with sauce/chutney.
Tips:
- When preparing this dish for kids add grated cheese and reduce chilli powder usage.
- Instead of oats can use semolina/sooji ,adding vegetables mentioned are optional.
