Vegetable Fried Rice | Easy Indo Chinese Fried Rice
Preparation & Cooking Time: under 30 minutes
Yield: 4 servings
Ingredients:
Basmati Rice - 2 cups (cooked with 4 cups of water)
French beans -1/2 cup, cut diagonally into thin strips or cubes

Shredded Cabbage - 1/2 cup

Shredded Capsicum- 1/2

Chopped Cilantro- 1 tbs
Chopped Spring Onion-1

Vinegar - 1 tsp
Spring Onion white - 1/4 cup, chopped
Spring Onion Greens - 1 cup ,chopped
Spring Onion white - 1/4 cup, chopped

a pinch of ajinomoto (optional)
Garlic Pods - 2 finely chopped

Green chilli - 1
tbsp finely chopped
Pepper Powder - 1 tsp
Salt to taste
Olive Oil - 1 1/2 tbsp

Method:
1. Cook the basmati rice and cool in a wide tray to evaporate the moisture in it.
2.Heat the oil in a fry pan, Saute the garlic until light brown. Add the green chili, vegetables, spring onion whites and toss over a high flame for 3 to 4 minutes till the vegetables turns soften but crisp.
3. Add the Vinegar, ajinomoto and rice. Toss to combine well. It gives nice aroma.
4. Throw in spring onion greens, pepper powder and salt. Mix well and sauté for 2 minutes.
Serve with hot garlic chilli babycorn or veg manchurian.
If you have lots of leftover rice, utilize making veg fried rice. It tastes equally great.
If you like to add egg to this fried beat 2 eggs add after vegetables gets cooked before adding rice and yummy VEG EGG FRIED RICE is ready. Make it fresh and serve immediately.
For variation try the same procedure with noodles to makes delicious veg fried noodles.
