Vermicelli Vegetable Pulao

Here comes with another yummy, delicious South Indian breakfast Recipe. Vermicelli is mixed with vegetables and  spiced up with all masala and cooked. This is very healthy and colorful breakfast too. Make a note of the ingredients required to prepare this easy dish. Try and send us feedback.

Yield : Serves 2


Vermicelli - 200g ( use thick vermicelli)
Onion - 1 medium finely chopped
Carrot, French Beans, Cauliflower - 1/4 cup finely chopped
Green Peas - 2 tbsp(boiled)
Green Chili - 3 slit lengthwise
Ginger Garlic Paste -1 tsp
Curry leaves - 1 spring Chopped
Coriander leaves - 1 spring Chopped
Turmeric Powder-1/4 tsp
Aesefatodia - 1/4 tsp
Cloves - 2
Salt - 1 1/2 tsp
Oil - 1 tbsp

For Seasoning:
Mustard seeds-1/2tsp
Split Urad Dhal-1/2tsp
Cumin Seeds-1/2tsp
Cashew Nuts-5 no.


  1. Wash and cut all vegetables,onion and keep aside.
  2. Chop green chili,coriander,curry leaves and keep.
  3. Heat a fry pan, add vermicelli, dry roast and keep aside. Alternatively use roasted vermicelli to skip this process.
  4. Heat a fry pan add oil, throw in the seasoning given under for seasoning add cloves, cashews. Now put in onion, ginger garlic paste and saute well.
  5. Stir in chopped green chili, curry leaves and turmeric powder.
  6. Add chopped vegetables, salt and cook covered for 5 minutes.
  7. Pour 2 cups of water and bring to boil.
  8. Add roasted vermicelli and stir well.
  9. Slow down the flame and cover with the lid, continue cooking till vermicelli is done with soft.
  10. Squeeze half of lemon juice and garnish with roasted cashews and coriander leaves. 


Adjust the amount of water needed for cooking vermicelli or follow the instruction on the vermicelli packet.
