Ingredients:
Black Big Brinjal - 2 nos.Onion - 1 big finely chopped
Tomato - 1 big finely chopped
Garlic- 2 pods finely chopped
Coriander leaves - 2 springs finely chopped
Cumin - 1/2 tsp
Mustard seeds - 1/2 tsp
Asafotedia - a pinch
Turmeric powder - 1 tsp
Chili Powder - 1 tsp
Amchur Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Salt as per taste
Oil - 2 tsp

Method:
- Wash the Brinjal and make a slit without halving and apply lil oil on the skin.
- Roast them direct on medium gas flame until its skin starts to remove.
- Take them off from flame and let it cool for some time and remove its skin. Chop it finely and keep aside.
- Heat the oil in a frying pan and add cumin and mustard seeds. When they start fluttering add hing, onion and garlic. Saute well.
- Add tomato and all other spices into it. cook well.
- Finally add mashed/chopped brinjal and coriander into it.
- Cook it for 5-7 mins unitl oil starts to leave.
- Serve hot with roti or paratha. It suits very well with millet roti. (Bajra Rotla)
