Cucumber Rice
Hi friends Have you ever tried cucumber for rice preparation?? Well many of you would get doubt of how to prepare rice with this watery vegetable ??? Follow the below procedure to make this simple and delicious rice for this summer.
Cucumber Rice |
YIELD – 2 Servings
Ingredients:
Steamed Rice-2 cups
Cucumber- 1 medium
Onion- 1 Large dice lengthwise
Tomato-2 Medium finely chopped
Ginger-1 tbsp chopped
Peanuts-1 tbsp
Green Chilli-2
Red Chilli Powder-1 tsp
Turmeric Powder-1/2 tsp
Salt To Taste
Oil-2 tbsp
For Seasoning:
Hing-1 tsp
Mustard Seeds-1 tsp
Cumin Seeds-1 tsp
Method:
Cucumber Rice |
- Wash and peel outer skin of the cucumber and grate. Squeeze of the water from the grated cucumber and keep aside.
- Heat oil in a fry pan, add hing, mustard when it starts splutter add cumin and peanuts. Saute well till peanuts are done with light golden brown.
- Add ginger, green chilli and saute for a minute.
- Add onion, little salt and stir till onions are translucent. Add turmeric powder and tomato,continue stirring till tomatoes are soft.
- Combine the grated cumcumber and mix well to form a thick gravy. Check for the salt and add if required.
- Combine the steamed rice to it and mix well enough to blend all the ingredients together.
- Sprinkle little water and cook covered with a lid for about 5 minutes on slow flame(this step makes rice soft till you eat).
- Serve cucumber rice with papad and chilled Raita.
Note:
Whenever you are preparing any mixing rice recipe sprinkle little water and cook covered for 5 minutes on low fire during the final stage. This will help the rice to become soft to eat.
