Hara Bhara Healthy Pulao

YIELD –3 servings
Spinach - 1 cup (finely chopped)
Mint leaves - 1/4 cup finely chopped
Green Peas - 1/2 cup
Onion - 1 small chopped lengthwise
Green chillies - 1-2 finely chopped
Cashew - 8-10 nos. roughly chopped
Cumin Seeds - 1 tsp
Salt as per taste
Pepper powder as per taste
Oil - 1 tsp

Ingredients:
Brown Rice- 1 cupSpinach - 1 cup (finely chopped)
Mint leaves - 1/4 cup finely chopped
Green Peas - 1/2 cup
Onion - 1 small chopped lengthwise
Green chillies - 1-2 finely chopped
Cashew - 8-10 nos. roughly chopped
Cumin Seeds - 1 tsp
Salt as per taste
Pepper powder as per taste
Oil - 1 tsp
Method:
- Wash and soak brown rice in hot water for half hour.
- Heat the oil in a pressure cooker and add cumin seeds with onion. Saute.
- Add Spinach, mint leaves and green peas into it.
- Add cashew, chili, salt and pepper as well. cook for few minutes.
- Remove water from rice and add rice into cooker. cook for 3-4 minutes.
- Add 4 cups of water and cover the lid of cooker. Cook it until 7-8 whistles.
- Let it cool down until steam come out of cooker.
- Serve hot with Raita, Curries and Dal.
