Muthia ~ A Traditional Gujarati Snack
Wholesome and healthy, steamed and spiced dumpling made from wheat flour, selected veggies and basic spices.
Muthia is a traditional Gujarati tea time snack. Muthi means 'Fist' in Gujarati so while steaming process we give them fist shape. Traditional recipe calls bottle gourd and methi which gives best flavour and texture. but you can play around with your choice of vegetables i.e grated cabbage, carrot, palak, corn etc...Tempering with sesame seeds along with mustard and cumin is a specialty of gujju snacks but here I tried to make fusion Muthia called Muthia Manchurian and seasoned it in chinese style with sauces. Here goes the recipe of Traditional Recipe of Muthia.
YIELD – 4 servings
Ingredients:
For Muthia:Wheat Flour - 1 cup
Besan - 1/2 cup
Curd - 1/4 cup
Bottle gourd - 1/2 cup grated
Methi/Fenugreek leaves - 1/2 cup chopped
Ginger Garlic Paste - 1 tsp
Salt as per taste
Chili powder - 1 tsp
Turmeric Powder - 1/2 tsp
Asafotedia - a pinch
Sugar - 1 tsp
Lemon juice - 1 tsp
Oil - 2 tsp
Soda Bicarb - a pinch
For Tempering:
Oil - 2 tsp
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Seasame Seeds - 1 tsp
Curry leaves - 4-5 leaves
Chat masala - 1/4 tsp
Chili powder-1/4 tsp
Sugar - 1/2 tsp (Optional)
Coriander leaves for garnishing..
Method:
- Combine all the ingredients of Muthia in a mixing bowl and make a soft dough. Add little water if required. (as bottle gourd tends to leave its water, squeeze out water from it
- Divide them into a 15 balls and give them oval shape and press a little with all four fingers to give fist shape. (apply few drops of oil in your palm if dough is sticking)
- Keep them in a greased steamer pan and steam cook for 15-20 mins or until cooked well. test check with knife/fork before take them out.
- Once done take them out and let it cool down for 5-8 minutes.
- Cut each muthias in bite size pieces and keep it aside. (we normally love to eat just like that with oil and garlic chutney without seasoning and finish almost half of them.)
- In a large non stick pan heat the oil, add torn curry leaves, mustard. cumin and sesame seeds.
- Once they stop splutter add chat masala, chili powder and immediately add muthia bites.
- Toss them well and cook tit on low to medium flame for 10 minutes untill all sides are brown. Toss them in between to cook all sides evenly.
- Garnish with corainder leaves and serve with tomato sauce or green chutney.
- Dish out and serve hot with tea or coffee.
