Stuffed Capsicum

Last weekend i tried this yummy recipe for appetizer and it tastes awesome. I hardly took 10 minutes to cook and very less oil too.The Capsicum with vegetables tossed in besan blends perfect and the melted cheese gives scrumptious flavor to the dish. This one is very simple and easy to prepare bake for treats, parties and will be new dish too. Try this recipe and send us feedback.

YIELD –2 Servings


Capsicum -2(green,red)
Green peas- 1/4cup (frozen)
Sweet Corn-1/4 cup (frozen)
Carrot-1/4 cup cut into small cubes
Besan/Gram Flour-2 tbsp
red Chilli Powder-1 tsp
Salt-1 tsp
Oil-1 tsp


  1. Wash capsicum, remove the stem and scoop out  the seeds and keep aside.
  2. Combine green peas,sweet corn, carrot and microwave high for 2minutes using oven safe bowl.
  3. Now add besan, red chilli powder,oil and salt, mix well and cook for further 1-2 minutes.
  4. Stuff the vegetable mix inside the capsicum and add grated cheese on top as garnish.
  5. Place the capsicum in the microwave proof plate and bake for about 3-5 minutes.
  6. Serve this yummy delight as starter. 


For variation you can saute all vegetables with masala in fry pan and stuff it inside capsicum. Slow cook in the fry pan covered for 5-10 minutes till capsicum is soft and cheese is melted.
Try the same version with tomatoes too.
