Ridge Gourd With Peanut Masala
YIELD –2 Servings
Ingredients:
Ridge Gourd-1 largeOnion- 1 large chopped
Roasted Peanuts- 2 tbsp
Dried Red Chilli- 4-5
Salt To Taste
Oil- 1 tbsp
For Seasoning:
Gingelly Oil-1tbsp
Mustard Seeds-1 tsp
Cumin Seeds-1 tsp
Split Urad Dhal-1 tsp
Hing-1 tsp

Method:
- Scratch and discard the Ridge gourd thick outer rind and finely chop the pale green part.
- Blend together roasted peanut, red chilli, salt using mixer or spice blender.
- Heat oil in a wok, add seasoning.
- Stir in the chopped onion and saute till transculent.
- Add the chopped ridge gourd and little salt and cook till becomes soft( do not add water as the veggie will ooz out water when it starts cooking).
- Combine the peanut spice powder at the final stage of cooking, stir well to mix and let it stand few minutes.
- Serve hot curry with steamed rice, Roti N Paratha.

Note:
Do not overcook ridge gourd as this will result in mashed condition.Presenting the prepared food is more important, do serve the same way I did and surprise your family, this will really attract them to eat for sure.
