Thai Yellow Curry Paste

This is a base curry paste for Thai yellow curry. Make this curry paste to make a rich thai yellow curry and it can also be stored in refrigerator for future use.

Thai Yellow Curry Paste

YIELD – 1 cup


Dry chillies - 6
Coriander seeds - 2 tsp.
Cumin Seeds - 1 tsp.
Lemongrass chopped - 3 tbsp.
Shallots - 4 (chopped finely)
Garlic - 2 (chopped finely)
Ginger - 1" (Chopped finely)
For the curry powder:
Turmeric - 1 tsp.
Cumin powder - 1/2 tsp.
Coriander powder - 1 tbsp.
Grated candle nut -  1 pinch


  1. Combine all the ingredients for curry powder.
  2. Dry roast coriander seeds in a pan. Add cumin seeds and  dry chillies and put off the stove.
  3. Now add all the ingredients and blend it in a blender to a fine paste with a little water.
  4. This can be stored in the fridge for future use.
