Vegetable Kadai

Assorted Vegetables cooked with Indian spices will make your dinner perfect. Vegetable Kadai is very popular dish in North India and served in authentic Punjabi Restaurants all over the world. Ezcookbook invites you to try this very easy Vegetable Kadai Recipe.
Vegetable Kadai

YIELD – 3 persons


Oil - 2 tbsp
Carrot - 1 no. cut into 1/4 inch cubes
Cauliflower - 1/2 cup small florets
Capsicum - 1 no. cut inot small cubes
French beans - 1/2 cup 1/4 inch long
Frozen Green Peas - 1/2 cup blanched
Onion - 1 large chopped in cubes
Tomato Puree - 2 tbsp 

For Paste
Onion - 1 small size

Ginger - 1 inch piece

Garlic - 3 pods
Dry Red Chili - 2 nos
Cumin seeds - 1 tsp
Coriander Seeds - 1 tsp
Cloves - 2 nos.
Cashew - 5-6 nos.

Salt as per taste
Turmeric Powder - 1/2 tsp
Garam Masala - 1 tsp
Chili Powder - 1 tsp
Coriander Powder - 1 tsp


Vegetable Kadai
  1. Grind all ingredients in a coarse paste.
  2. Heat the oil in a pan and add cubed onion. Saute.
  3. Add above prepared paste and saute well.
  4. Add all spices and mix well.
  5. Now wash and add all the chopped vegetables.
  6. Mix well and sprinkle some water and cover the lid. Cook until all vegetables are cooked well.
  7. Now add tomato puree and cook again for 2 3 mins.
  8. Garnish with liced tomato and coriander leaves.
  9. Serve hot with Roti/Paratha/Naan.
