Khaman Dhokla -Instant Preparation Method

Today I am gonna explain the procedure of traditional gujarati delicacy Khaman Dhokla also known as Nylon Khaman Dhokla, it is well known for its irrestible flavor. Its is very light,healthy,delicious,melting and nutritious too. I am gonna explain you how to prepare this dhokla instantly when you find hard time to follow original recipe preparation with all those fermenting steps. It is basically made with Chickpea flour/besan. It is steamed food and thus becomes healthy. There are many versions of dhokla are made with different batter and this is one among the recipes. Lets learn how to make this soft fluffy Khaman Dhokla at home with simple procedure.

Khaman Dhokla -Instant Preparation Method

YIELD – A Tray of 16-20 pieces 


Besan /Chickpea Flour- 1 cup
Sooji/Rava-1 1/2tbsp
Citric Acid-1/2 tsp
Turmeric Powder- pinch
Green chilli Paste-1/2tsp
Ginger Paste-1/2tsp
Sugar- 1 tbsp
Eno(fruit Salt)- 11/2tsp
Water- 1cup approx.
Oil-2 tbsp
Salt to Taste

For Seasoning:
Mustard Seeds-1tsp
Green chili-1chopped

For Garnish:
Fresh grated Coconut-2tbsp
Coriander Leaves- 2 tbsp chopped
Sesame seeds-1tsp

For Sugar syrup:
luke warm water-1/2 cup


  1. Heat  Steamer with water at the bottom and let it get hot.
  2. Grease the Tray with oil  which is been used for steaming the batter  to make dhokla .
  3. In the meantime combine besan, sooji, citric acid, sugar and salt  in a mixing bowl.
  4. Add Water little by little to form good batter without any lumps.
  5. Now add oil, green chilli, ginger paste and mix well with batter.
  6. Finally add eno and mix  well enough till it fluffup and it will start raising. Now pour it to the greased tray and steam it for around 15 minutes or till it in done.
  7. Check the finished dhokla with fork / knife and continue cooking further few minutes if it is not done.
  8. Prepare seasoning and pour it on top of the dhokla and give a standby time for 2-3mts then cut into desired shaped. Combine sugar and warm water to make syrup.
  9. Sprinkle the sugar syrup or pour over the dhokla and garnish with coconut, coriander and sesame seeds(optional).
  10. Serve this yummy fluffy dhokla with green Chutney.


Prepare batter to the measurement mentioned to make perfect soft mellting dhokla.
Eno and citric acid helps to provide instant raising and sour taste to make soft fluffy dhokla.
If you don't find citric acid replace with fresh lemon juice.
