Coriander Rice

Fresh Coriander leaves are rich source of vitamins and minerals. They are also rich in thiamin, riboflavin, vitamin C, phosphorous, iron, calcium, niacin, sodium, carotene, oxalic acid and potassium. Many of us dont know all the benefits but use these unknowingly in small amounts (like garnishing) in our daily food which is for good. Coriander Rice is one of the tasty rice variety which is also so easy to prepare. This is my version of Coriander rice that turns out so yummy.

Coriander Rice



Basmathi rice - 1 cup
Salt - to taste
Roasted Cashews - 10
Chopped fresh coriander leaves - 1 tbsp.

To grind to paste:
Fresh coriander leaves - 1 cup
Onion - 1 (small)
Garlic - 1 clove
Ginger - 1/2"
Green chilli - 1 or 2

For seasoning:
Oil - 2 tsp.
Mustard - 1/2 tsp.
Gram dhall - 1/2 tsp.
Hing - 1/4 tsp.
Curry leaves - 2 springs.


  1. Soak basmathi rice in water for half an hour.
  2. Drain the water, cook the rice in a pressure cooker with the required salt and water to the ratio 1:1.5
  3. Cool down the rice completely.
  4. Chop out the stems from the coriander leaves and wash it thoroughly.
  5. Grind all the ingredients for the paste in a mixer grinder with a little water.
  6. In a kadai, heat oil and season it.
  7. Add the ground paste, salt and saute in medium flame until all the raw smell disappears. (Add water if required to ensure that the paste doesn't burn, but make sure that the paste is not watery at the time of adding rice.).
  8. Add the cooked and cooled rice to this and mix well, so that it all combines well. 
  9. Put off the stove. Garnish with chopped coriander leaves and cashews.
  10. Serve hot with Raitha and Pappad.




  • You can also add mixed vegetables if you like to make it more nutritious. But when you add them chop them finely and add before the paste with little water to cook them well.
  • You can also use other rices. But make sure the rice are grainy.
