Moraiyo/Samo Khichdi ~ Fasting Recipe
Samo seeds or Moraiyo seeds or "Vari Tandool" in Marathi also popularly known as Bhagar in India are seeds of a grass Echinochloa Colonum. It was formerly classified as a type of panicum grass. With digestible fibers, high nutritional content and excellent nourishment, It forms a heavy and a filling meal and used generally by North Indian Hindus on fast days. It can be easily available in all Indian grocery stores. Samo Khichdi can be served with Rajgara kadhi or Peanut Amti or goes very well simply with curd also. Here goes the recipe of Samo Khichdi.
Cumin Seeds - 1 tsp
Curry leaves - 5-6 leaves
Green Chili - 1 finely chopped
Ginger - 1 tsp grated
Tomato - 1 small finely chopped
Potato - 1 chopped
Salt as per taste
Chili powder - 1 tsp
Moraiyo/Samo - 1 cup
Butter milk - 2 cup
For Garnishing
Fried or Roasted Peanuts
Coriander

YIELD – 2 persons
Ingredients:
Ghee/Oil - 1 tbspCumin Seeds - 1 tsp
Curry leaves - 5-6 leaves
Green Chili - 1 finely chopped
Ginger - 1 tsp grated
Tomato - 1 small finely chopped
Potato - 1 chopped
Salt as per taste
Chili powder - 1 tsp
Moraiyo/Samo - 1 cup
Butter milk - 2 cup
For Garnishing
Fried or Roasted Peanuts
Coriander

Method:
- Wash samo with water and soak it for 15 mins in sufficient water.
- Heat the oil in a pan, add cumin seeds and curry leaves.
- Add green chili, ginger, tomato and potato. Add salt and chili powder and saute well.
- Remove the extra water from soaked samo and add it to the pan.
- Add butter milk and cover the lid of pan.
- Cook untill samo cooked well. It will take around 10 mins. Stir in between and add more water if required. It will get the texture of 'sooji upma'.
- Once cooked serve in serving plate and garnish with friend peanuts and coriander.
- Serve hot with curd.
