Nei Appam ~ Fasting Treats
Nei Appam is a sweet made for many fastings and festivals like Karthigai deepam. Varalakshmi Nombu or Vratham is a fasting followed by married women from various parts of India. Tomorrow (27 Jul 2012) being Varalakshmi Vratham we are sharing with you the recipe of Nei appam which is so easy to make on a fasting day and also a perfect food for a fasting taste bud. We will be coming up with more Fasting recipes tomorrow for you to make during the Vratham. Make this Nei Appam for the fasting following the easy method given.
Jaggery - 1 1/2 cups
Over ripe Banana - 2
Cardamom Powder - 1/4 tsp.
Ghee - For cooking

Ingredients:
Raw rice - 2 cupsJaggery - 1 1/2 cups
Over ripe Banana - 2
Cardamom Powder - 1/4 tsp.
Ghee - For cooking
Method:
- Clean, wash and soak rice for 4 hours.
- Grind the rice with just little water that it does not get struck while grinding.
- Meanwhile heat a pan. Add a tbsp. of water to the crushed jaggery and put it in the hot pan. Stir to make a syrup.
- Filter this syrup in a strainer to remove impurities from the jaggery.
- Add this to the mixer grinder when it is cool and run the mixer grinder again. (If it will require water add a little.) Transfer the batter to a bowl.
- Smash the bananas and add this to the batter.
- Add cardamom powder to the batter.
- Set aside for 2 hours.
- Now heat a Kuzhipaniyaram pan. Add little ghee to each mould.
- Pour batter until the rim or a little lesser to the rim.
- Once it is cooked on the bottom, turn it over for the inner dough to get cooked.
- To check if it is fully cooked just insert a skewer inside. If the skewer doesnt contain any uncooked batter the appam is ready to be taken.
- Continue this with the remaining batter also.
- The Nei appam is ready.
- This is kept in front of Varalakshmi as a Naivedyam(Offerings) for her. (Once the prayer is over ofcourse it has got the blessings from varalakshmi and it is a prasadam for you now)
Note:
- Do not add more water. Add water little by little, otherwise batter will become more watery. If it becomes watery add little wheat powder.
