Rajgara/ Amaranth Paratha - Fasting Recipe

I have always wondered what is it in rajgira that makes it such a favourite on days of fasting although being a grain? Well, it is botanically a ‘non-cereal’. Secondly, it has enormous nutrition such as lysine, the one essential amino acid that is hard to find in vegetable protein sources. What is good too is that when you combine rajgira with another grain like corn you end up with an amino acid balance which is richer than even meat and milk. It makes enormous nutritional sense therefore to use this super non-cereal on fasting days.

This grain immensely for its great powers and felt grateful to God for its benefits. They named it ramdana (God’s grain) and rajgira (royal grain)The English name of the grain is amaranth. And believe it or not the word originates from the Sanskrit word, which means ‘deathless’.

Here goes the recipe of Rajgara Paratha.....

Rajgara/ Amaranth Paratha

YIELD – 8 parathas


Potato - 1 big size boiled and mashed
Rajgara / Amaranth Flour - 1 cup
Salt as per taste
Cumin seeds - 1/2 tsp
Chili powder - 1 tsp
Oil - 1 tsp
Ginger paste - 1/2 tsp
Rajgara/ Amaranth Paratha


  1. In a large mixing bowl combine all the ingredients except ghee and knead a semi soft dough. (Adjust flour OR mashed potato to knead a smooth dough. But do not add water)
  2. Keep the dough aside for 15 minutes and knead it again with lil ghee/oil on it.
  3. Take a one ball of the dough and dust it with the flour. Roll out into a round Paratha.
  4. Heat the tava and shallow fry the paratha with ghee on both the side until golden brown.
  5. Serve hot with curd and potato bhaji.


You can also substitute yams and curd with potato.
