Ada Pradhaman/Payasam ~ Onam Special

Our dear friend, Jyothi Kathir  who is regular follower of ezcookbook is celebrating Onam Festival by sharing her few Onam special recipes.  Ada Pradhman /Payasam is a delicious sweet treat prepared specially for Onam feast. Ada Pradhaman/Payasam

YIELD – 6 persons.


Ada (Rice Sheets) - 200gms (available easily in grocery store)
Jaggery - 250gm
Cardamom powder - 1/2 tsp
Dry Ginger powder - 1/2 tsp
Cashew nuts -about 10 nuts broken
Ghee - 3 tbsp
Coconut -1small (grated)


  1. Soak the Ada overnight.
  2. Immerse coconut in a 1 cup of hot water, grind it and extract thick milk from it.
  3. Repeat the above process and make a second thin extract and keep it aside.
  4. Boil 2 cup of water in a pan and add jaggery.  Boil until it develops a smooth consistency.
  5. In another pan, heat the ghee and fry cashew until golden brown. take it out and keep aside.
  6. In a same pan of ghee add soaked ada( strain out extra water from it)in it and mix well.
  7. Add lil hot water to jaggery and mix untill it dissolved properly.
  8. Add boiled jaggery to ada and mix properly.
  9. Now add second thin extract of coconut milk and boil for 5 mins. Keep stirring to avoid lumps.
  10. Add the first extract of coconut milk and boil unitll mixture becomes medium thick or desired consistency.
  11. Finally sprinkle cardamom and dry ginger powder along with fried cashew nuts.
  12. Delicious Ada Pradhman is ready to serve.


You can use readymade coconut powder and make milk from it by adding required water in it.
You can also add fried coconut chips with cashew to add flavors.
