Karela/Bitter Gourd Tossed in Besan

Karela or Bitter gourd is very well known for its bitterness in its taste and hence people usually keep away from this vegetable. But Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folic acid, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana. When it is cooked with Besan / Gram flour the dish will give us double nutrients. Follow this recipe Karela/Bitter Gourd Tossed in Besan and believe me you will not feel any bitterness in this subji and will surely like its taste.

Karela/Bitter Gourd Tossed in Besan

YIELD –2 persons


Bitter gourd - 1 cup ( deseeded and chopped)
Besan - 3/4 cup
Oil - 3 tbsp
mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
hing a pinch
Ginger Garlic Paste  - 1/2 tsp grated

Salt as per taste
Turmieric powder - 1/2 tsp
Coriander powder- 1 tsp
Chili powder - 1 tsp
Garam Masala - 1/2 tsp
Jaggery - 2 tbsp (shredded)

Karela/Bitter Gourd Tossed in Besan


  1. Remove the skin and seeds of Bitter gourd and chop them. add 1tsp of salt in that and keep it aside for 15 mins.
  2. Wash them properly twice in running water. Remove all the water by squeezing them using both your palms.(this process helps to reduce the bitterness of bitter gourd)
  3. Heat the oil in kadai, add mustard and cumin seeds. once they stop fluttering add hing and bitter gourd.
  4. Mix them well and add ginger garlic paste along with all the spices powder i.e. turmeric powder, salt, chili powder, coriander powder and garam masala.
  5. Mix well and cook for 5 mins on high flame. add some water about 1/2 cup, turn the flame on medium and cover the lid.
  6. Cook it for another 5 minutes or until bitter gourd is cooked well.
  7. Once it is cooked well and start leaving oil, add shredded jaggery in it. cook it for another 3-4 minutes.
  8. finally add besan and mix well. cook for 2-3 more minutes stirring continuously.
  9. Bittergourd Besan subji is ready to serve.


Preapre this subji just before serving as it is tasty only if served hot . Once it will cool down it will be extra dry and may not be as much tasty as hot.
