Karunaikizhangu Masial/ Mashed Yam Stir Fry
Karunaikizhangu is known as Yam ordinary in English. This is a very good medicine for piles. This Karunaikizhangu Masial can be made to serve with Dhal and rice. Being my hubby's favourite dish, I learned this from my MIL who makes it very well. This is also easy to make and the procedure is as follows.
Tamarind - 1/2 gooseberry size
Thick Coconut milk - 1/2 cup
Shallots - 6
Sambar Powder - 1 tsp.
Turmeric powder - 1/4 tsp.
Salt - as per taste.
Oil - 2 tsp.
For Seasoning:
Mustard seeds - 1/4 tsp.
Urad dhall - 1/4 tsp.
Fenugreek seeds - 1/4 tsp.
Curry leaves - 1 spring

YIELD – 2 SERVINGS
Ingredients:
Yam Ordinary / Karunaikizhangu - 2 (big)Tamarind - 1/2 gooseberry size
Thick Coconut milk - 1/2 cup
Shallots - 6
Sambar Powder - 1 tsp.
Turmeric powder - 1/4 tsp.
Salt - as per taste.
Oil - 2 tsp.
For Seasoning:
Mustard seeds - 1/4 tsp.
Urad dhall - 1/4 tsp.
Fenugreek seeds - 1/4 tsp.
Curry leaves - 1 spring
Method:
- Peel and Chop the shallots finely.
- Soak the tamarind in 1/2 cup of water and extract the pulp from it.
- Cook the Yam with enough water until it can be mashed, in a pressure cooker. (It can be cooked by simmering for 7 minutes after first whistle)
- Once pressure releases open the cooker, cool down the yam, Peel it off and mash it well with a spoon.
- Add the tamarind extract, Sambar powder, Turmeric powder, Salt and coconut milk. Combine well.
- Heat oil in a pan and season it with the seasoning ingredients.
- Add onions and saute until they are translucent.
- Add the Yam mixture to this and stir fry until the yam mixture comes to a thick yogurt consistency. (It should not flow)
- Serve with steamed rice and dhall.
Note:
- Stir fry continuously until the required consistency is obtained else it will burn at the bottom.
