Ragda Pattis ~ A Chatpatta Chat
Potato patties served in spicy peas gravy and topped with chatpatti/tangy chutneys
Ragda patties, another popular chat which is healthy, filling and tongue tickling as well. Ragdo; a peas gravy is versatile dish which can be served in variety of chats and dishes. Recipe is quite lengthy but worth trying once to win over your tongue and will make you eat more and more.. Here goes the recipe of Ragda Patties...
YIELD : 4 servings
Ingredients:
For Ragdo :Dried White Peas - 1 cup
Onion - 1big size finely chopped
Tomato - 1 big finely chopped
Green chili - 2 small
Ginger Garlic Paste - 1 tsp
Turmeric Powder - 1 tsp
Chili Powder - 1 tsp
Salt as per taste
Garam Masala - 1 tsp
Tamarind Pulp - 1 tsp
Cumin seeds -1 tsp
Hing a pinch
Boiled Potato - 1/2 mashed (optional)
Oil - 1 tbsp
For Aloo Patties
Boiled Potatoes - 4 Big Size mashed
Ginger chili paste - 1 tsp
Salt as per taste
Turmeric - 1/2 tsp
Chat masala - 1 tsp
Corn Flour - 2 tbsp
Oil - for frying
For Serving
Date Tamrind Chutney
Sev
Finely chopped Onion
Finely chopped Coriander
Method:
- Soak the white peas overnight. Boil it with sufficient water and salt. keep aside.
- Heat the oil in pan and add cumin seeds and hing.
- Add onion, ginger garlic paste and saute for 2 minutes or until onions are transperent.
- Add tomatoes and green chili. cook again for 2 minutes.
- Add all the spices. i.e. salt, turmeric powder, chili powder and garam masla powder. (careful with salt as we already added salt while cooking peas, so here just need to add for tomato onion gravy.) Cook for 2 more minutes.
- Add cooked peas and mix well. Add water to adjust consistency. Mash few
- of the peas with the back of the spoon to make thicker consistency of gravy. To make gravy more thicker add mashed boiled potato.
- Add tamarind pulp and cook it for 8-10 minutes. Keep stirring in between and add little water if required.
- Ragdo is ready. You can enjoy it simply with bread, roti or rice. Or go ahead to make this yummy chaat further.
- In a large mixing bowl add all the ingredients given for or aloo patties except oil.
- Combine them in a dough and make a small patties/tikkies.
- Shallow fry patties/tikkies on a hot tava using oil until both sides are brown.
- Take a serving plate and place two patties in it.
- Pour over a big full spoon of ragda over it. add some more ragda if you wish.
- Sprinkle chopped onion and coriander.
- Pour over a spoon of date tamarind chutney. (To tickle your tongue use green chutney and garlic chutney to make it more chatpata..:) )
- Finally sprinkle some sev on it.
Note:
Variations : You can use same ragdo to make variety of chat Items
- Samosa Chat - Break Samosas in pieces and use them instead of Aloo Patties
- Idli Chat - Use leftover Idlis instead of Aloo Patties.
- Masala Pav - Instead of aloo tikkies you can use pieces/bites of pav or any bread.
- Masala Puri - Take puris of "Pani puri" and fill the ragda instead of pani in it and garnish with same ingredients. Or simply use flat puris/Papadi instead of tikkis.
- Go ahead to play around your imagination to make variety of veg/non veg tikkies/patties to replace aloo patties.
- If tired of making ragdo and don't have energy to make chat; simply serve it with rice or roti.
