Cold Pasta Salad | Easy Summer Recipes

Pasta-based salad full of Mediterranean  flavours of tomato,

 bellpepper,

 basil, oliveoil, cucumber..... 

A quick and easy  cold pasta salad with tomatoes, bell peppers, garlic, cucumber, basil.  Great to have for brunch, luncheons or whenever you feel to have. Best to have during summer time that really keeps you cool. You can do this salad in whatever way you find, but I never finds it to be difficult any more. This pasta-based salad is packed with Mediterranean flavours and suitable for a large party. This is one such easy salad that disappears so soon I place it. 

Preparation & Setting Time  : 30 minutes

YIELD :2 servings

Ingredients:

Spiral Pasta - 1 cup boiled

Green Bell Pepper / capsicum - 1/4 cup cut into cubes

Red  Bell Pepper / capsicum - 1/4 cup cut into cubes
Cucumber - 1/4  cup diced

Tomato - 1 medium cut into small cubes (discard the seeds)

Garlic - 2 cloves crushed

Grated Cheese - 1 tbsp

Vinegar / lime juice - 1 tbsp

Basil Leaves - 4 

Salt & Pepper For Seasoning

Olive Oil - 1tbsp

Method:

1. Cook pasta as per packet instruction or follow the procedure from here.
2. In a mixing bowl, combine bell peppers, olive oil, garlic, vinegar / lime juice, tomato. Give a quick mix.
3. Throw in the cooked pasta, basil leaves, grated cheese.Season with salt and pepper as per your taste. Toss to Combine. Your salad is done to taste.
4. Refrigerate few hours and serve chilled,
5. Enjoy the cold pasta  salad as a summer brunch.

Note:

• The vegetable mixture can be prepared in advance,then left overnight to soak up the flavours. Toss in pasta as much needed and enjoy.
• You can add one slice of toast bread, cut into cubes and mix with salad.
• Simply add more veggies to appealing color. This can be packed as a snack for school breaks.
