Eggless No Bake Honey And Chilled Mango Cheesecake

Try this most scrumptious, easiest cake with no  bake, egg.  And the admiring part in it, you no need to worry about the batter consistency, temperature setting like for baking, no need to buy expensive kitchen aid. I just adore at this the tempting no bake cake. Here I have posted easy step by step picture to avail you the best Cheesecake. This is my first attempt and I was totally in a fuss about the outcome. But I'm saved and came out well as expected.

We enjoyed the fantasizing mango flavour as being a mango lovers . First time I saw this Cheese cake in a pastry shop and there were many flavors . I got to try a plain cheese cake as per my cutie pie(daughter) suggestion. Not bad but was plain with no flavours, so decided to try for some flavoured Cheesecake next time. From then I crave to try it on my own. I have got a perfect day to try out and as said enjoyed too....
This would  be definitely a hit with your guest and no doubt for Kudos. And about the taste, I must say - it's smooth, melting in mouth, hhhhmmm yummy.

Ingredients for Mango Cheese Cake

You can buy fresh mangoes when it's in season or simply use canned mango puree. The cream cheese, again I don't know about the availability in India. If not, substitute with Paneer(Cottage Cheese). Use unsalted butter to taste better. Melt in Microwave for 10 seconds.  You can use any kind of cookies / biscuits to set the cake base. Also honey makes a healthy substitute for sugar. Agar agar also known as china grass is a edible source from red algae which is the key ingredient to set the cake. Also a good substitute for gelatin( from animal source), for vegetarians like me. Do check my Agar Agar Coconut Jelly.

Preparation  Time :30 minutes

Setting Time: 6-8 Hours

Yield : serves 6


For Base (Bottom  Layer): 
Chocochip Cookies / Oreo / Digestive Biscuits - 1 packet
Butter - 1/4 cup, melted

For Cheesecake(Middle Layer):
Cream Cheese - 200 grams
Honey - 2 tbsp
Condensed Milk - 1/2 tin(200 ml)
Juice of 1 Lemon(optional)
Mango Puree - 1 cup(refer note below)
Agar Agar / China Grass  - 10 grams
Water - 3/4th cup

For Glaze(Top layer):
I used the Agar agar and Mango puree mixture(refer method)
Few Mint Leaves


  • Melt the butter, crumble the cookies in mixie / processor. Blend cookies with melted butter.
  • Arrange the mixture at the base of the pan / any dish you prefer to serve. Tap the mixture with a flat base to set evenly. Now freeze the base for 15 minutes to set. 
  • Meanwhile roughly chop the china grass strands. Bring 3/4th cup of water to the boiling point and stir the china grass until it dissolves completely for 8-10 minutes. 
  • Cool for a while. Add a cup of mango puree to it. Mix well and keep aside. 
  • Now beat cream cheese and honey until smooth. Add condensed milk, lemon juice(optional) and stir to combine. Finally add half of the the mango chinagrass mix. Reserve the remaining half for glaze topping(top layer). Whisk altogether until smooth and flow. 
  • Bring out the biscuit base from fridge. Gently pour the cheese cake mixture and tap the tin to spread evenly. Refrigerate again for 30 minutes to set the top layer. 
  • Take out again and pour the reserved mango china-grass mix through the edges. Tap again to set evenly. Now it's done. Refrigerate again overnight or 6 hours to set completely. 
  • Slice down and serve chilled. (before slicing give a few minutes to loosen the cake a bit)
  • Stays good for 3-4 days in fridge. Enjoy as many when you crave for some dessert.

Serving Tip:
  • The cheesecake will be harder to cut directly from fridge, set out for a while, slice and serve.
  • Garnish with some fresh fruit like strawberry, cherry and few mint leaves. It gives an appealing look.
  • Also arrange some sliced fresh mango on top.


  • You can use agar-agar powder(5 grams) and if you use strands(10 grams). 
  • Also you can simply substitute gelatin(from animal source) for agar-agar, dissolve 1tbsp in warm water and use in the above recipe. 
  • If the cheese cake takes long time to set, no problem leave it again for couple of hours.
  • Here I used ready to use mango puree which I got from Mustafa, to make on your own select two ripe mangoes, peeled, pitted and make a puree to use.
  • You no need to buy any special utensil to make this cake  like spring pan(if you don't have), just can try with juice glass or any loose bottom tin.(below picture)
