Preparation Time : 20 minutes
Baking Time : 20 minutes
YIELD :2 bowls
Ingredients:
All Purpose flour - 1 cupGrated Sharp Cheddar Cheese - 1 cup
Unsalted Butter - 2 tbsp (room temperature)
Salt - 1/2 tsp
A pinch of baking soda
Milk - 3-4 tbsp (as needed)
Method:
- In a food processor, combine all purpose flour with cheddar cheese, butter, salt and soda.
- Pulse it until it gets mixed well. around 5-7 minutes.
- Add milk slowly 1 spoon at a time to form a smooth dough ball.
- Transfer dough in bowl. cover it with foil or plastic wrap and keep in refriegerator for 10-15 minutes.
- Preheat oven at 180 degree C and line baking tray with parchment paper.
- Roll out dough on baking paper into a thin layer (dime of 10 cent thickness). Careful while rolling, If it is very thick it wont cook properly from inside and wont be crunchy.
- Brush the dough with milk and cut it into diamond shape using pizza cutter or use your desired shape of cookie cutter. ( I used star shape for 1st batch. and from cutout of star shape I rolled it again and made diamonds for 2nd batch.).
- Place crackers into baking tray.
- Bake for 8-10 minutes until it starts turning into golden on edges. They will be crispy as they cool down so be careful not to over bake them.
- Cool them on wire rack completely. Store in air tight jar..
- Enjoy and Cheese-It, Munch-It, Crunch-It....
Note:
- Use only Sharp or extra sharp Cheddar cheese excellent flavor. Mild cheese doesn't give the special flavor.
- For healthy version replace all purpose flour with wheat flour or spelt flour.
- Keep checking crackers after 5minutes when in oven as it will be done fast. Mine was done in 7 minutes and i turned them to other side and baked them for another 2-3 minutes.
