Kutchi Dabeli Recipe | Dabeli Masala | EzCookbook
Dabeli is a another version of Vada Pav or Burger. It is made with specially prepared spiced potato stuffing filled in a bun along with chat essentials i.e sweet-tangy chutney, hot red chutney and sprinklers like sev, onion, peanuts and pomegranate. It is originated from a Gujarati Region Kutch and very popular as a street snack hence named and famous as a Kutchi / Kachhi Dabeli. Now it has taken same popularity in Mumbai street food as much as Vada Pav. Here goes the EzRecipe to Make Kutchi Dabeli.

YIELD :6 Dabeli
Ingredients:
Dabeli Masala - Its readily available in market but homemade is always best
Dry Red Chili - 2 nos
Kashmiri Red Chili - 2 nos
Corainder seeds - 1 tsp
cumin - 1/2 tsp
clove - 3/4 nos
cinnamon - 1/2" stick
Stuffing :
Boiled and mashed potato - 4 nos big
Dabeli masala - 1 tbsp
Butter - 1 tbsp
Salt as per taste
Dates-Tamarind Chutney - 1 tbsp
Finely chopped coriander - 1 tbsp
Coconut powder - 1 tbsp
Pomegranate - 1 tbsp
To Assemble :
Pav/Bun - 6 nos.
Butter - 2 tbsp
Red Chili Garlic Chutney - 2 tbsp (Mix 1 tbsp of All Purpose Garlic Chutney with salt and 1/4 cup of water)
Dates - Tamarind Chutney - 1 tbsp
Finely Chopped Onion - 1 no. big
Pomegranate - 3 tbsp
Masala Peanuts - 3 tbsp
Finely chopped Coriander - 1 tbsp
Nylon sev (gram flour vermicelli) - 3 tbsp
Method:
- Dabeli Masala:
- Roast all the ingredients in a pan for 2 to 3 minutes.
- Allow it to cool down and grind it into a fine powder. Store it and use it as required.
- Stuffing:
- In a bowl mix dabeli masala and date-tamarind chutney with 1-2 tbsp water. mix well.
- Heat butter in a pan and add above mixture in it. stir in for a while and add mashed potato along with salt.
- Mix well and cook for 3-5 minutes, test taste and add some more dabeli masala if required.
- Transfer the stuffing in a plate and allow it to cool down. Sprinkle coconut powder, coriander and pomegranate. Roadside vendors keep stuffing decorated like that which tempt anyone to order Dabeli. But I prefer to mix altogether which ease to assemble dabeli.
- Procedure to assemble :
- Slit a bun horizontally without cutting through. Apply butter inside and toast it only from inside. As after stuffing it needs to be toasted outside as final step.
- Spread hot garlic chutney and dates tamarind chutney on the bottom side of bun.
- Spread a one or two tbsp of layer of stuffing inside. Sprinkle onion, pomogranate, sev, masala peanuts and coriander on it.
- Close and press the pav/bun carefully to cover all stuffing inside properly and place it on tava to toast it.
- Delicious chatpati Dabeli is ready to serve . Serve hot.
