Vegetarian Bean Enchiladas

Corn Tortillas filled with beans & covered with cheese cream

Enchiladas belongs to authentic Mexican Cuisine. Authentic recipe called for a special chili pepper enchilada sauce to cover tortilla wraps. But it is so versatile that you can fill your tortilla with any filling i.e. beef, meat, chicken, veggies or beans. Same way you can cover them up with any sauce you like cheese cream, tomato, or chili paper. Try this recipe and bring a Mexican a taste to your dining table today.

Preparation Time - 15 mins

Cooking Time : 30 minutes

Yield : 2 to 3 persons


Corn tortilla - 4 nos
Cooking spray
Tomato puree - 1/4 cup
Mexican seasoning - 1 tsp
Sour Cream - 1/2 cup (I used yoghurt)
Cheddar cheese - 1/2 cup

For Filling
Cooking Oil - 1 tbsp.
Garlic - 1 tbsp. minced
White Onion - 1 big cut into stripes
Red & Yellow Peppers - 1/2 cup cut into small cubes
Zucchini - 1/4 cut into small cubes
Black eyed beans(Lobiya/Chawli) - 1 cup cooked
Tomato Puree - 1/4 cup
Salt as per taste
Chilli powder as per taste
Mexican seasoning- 1 tsp


  1. In a cooking pan heat the oil, sauté minced garlic and julienned onions.
  2. Turn the flame on medium to high and add yellow and red peppers and zucchini. Toss them well.
  3. Add in salt, chili powder and Mexican seasoning. mix well.
  4. Add in tomato puree and cooked beans. toss them well let it cook for 6-8 minutes or until the mixture get thicker. Once done turn off the heat and keep it aside.
  5. Now spray/grease the baking tray.
  6. In a wet kitchen towel wrap tortilla and heat them in microwave. (follow instruction on packet)
  7. Take one tortilla on work area and fill 2 tbsp. of above prepared mixture in middle of tortilla. Wrap it tight carefully and place it in baking tray. Repeat same process with all tortillas.
  8. once finished placing all tortilla wraps in baking tray, spread remaining bean mixture to the top of tortilla wraps.
  9. Pour evenly tomato puree on all wraps. Sprinkle Mexican seasoning on it.
  10. In a bowl mix well together sour cream and cheese. spread cream cheese mixture over tortilla wraps.
  11. Keep baking tray in preheated oven (350/180 degree) and bake it for 25 to 30 minutes.
  12. Serve hot as main course along with salsa, cheese sauce and guacamole. 


  • For variation You can make filling of your choice using any beans or vegetables.
  • For can make variety of sauce i.e. white sauce, spinach sauce, tomato sauce or authentic enchilada chili pepper sauce.
