Mixed Veg Stuffed Paratha | Vegetable Paratha

Healthy and delicious Paratha stuffed with mixed vegetables and spiced up with special Indian Spices powders.

This Healthy stuffed parathas are very popular among North Indians. I make it every other week and always in demand in my house. I can hide almost all the veggies in stuffing which my family member dont like to eat in curries or gravies. We all just love this yummy n healthy paratha anytime with curd and pickle. Here goes the recipe and learn how to make mixed veg stuffed parathas.

Preparation & Cooking Time: 50 minutes

YIELD: 8-10 parathas 


For Stuffing :
Potato - 2 medium boiled
Onion - 1 big grated
Carrot - 1 finely grated
cabbage - 1 cup finely grated
Green peas - 1 cup boiled
ginger garlic paste - 1 tbsp
Oil - 1 tbsp
Cumin seeds - 1 tbsp
hing a pinch
Salt as per taste
Chili powder - 1 tsp
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Chat masala - 1/2 tsp
Lemon juice - 1 tbsp

For Dough:
Wheat flour - 2 cups
Oil - 2 tbsp
Salt as per taste
water as needed and
Oil or butter for frying parathas


For stuffing heat the oil in a pan, and add cumin seeds and hing. Add grated onion and ginger garlic paste. saute for few minutes. Add grated carrot and cabbage and saute again for few minutes.  

Now add all dry spices powder i.e. salt, chili powder, coriander powder, garam masala powder, chat masala along with lemon juice. Mix well and cook for 2 minutes. Finally add boiled and mashed potatoes and green peas. 
Mix well and cook for 3-4 minutes on low flame. Switch off the flame and sprinkle finely chopped coriander leaves and mix well. Stuffing is ready. keep aside to cool down. 

For dough combine all the ingredients for dough i.e. wheat flour, oil and salt and knead into a soft and smooth dough by adding lil water as required. Dough should be little harder for paratha and softer that poori dough. Once ready keep aside and give rest for 15 minutes. 

Roll out two medium size thin roti from the dough. Add stuffing mixture in the center of one roti, and cover it properly with second. press the edges of paratha properly. Roll it again softly to make it one whole paratha. 

Heat tawa and cook it on medium using oil/butter until both sides are golden brown.

Serve hot with curd or raita and pickle. 


  • Make your dough tough than regular roti to hold the stuffing while rolling for paratha. 
  • Use as many vegatables as per your preference. The stuffing should be sauteed completely withour any more moisture to avoid spilling out of paratha.
  • Use pizza cut to shape the paratha in circles or as you desire.
  • For variation grind the par boiled vegetables and add to the dough directly with all spices.
