Vermicelli Dry Fruit Cake | No-Bake Cake Recipe

Vermicelli and cake is strange combination right??? Vermicelli are mostly used to make payasam or savory upma. While cakes are made from flour...Here I tried this unique combination and made this super delicious no bake cake. It tasted as yummy as normal fruit cake. Its perfect for any festivals or occasion!! Here is the recipe of no-bake, no-egg, super healthy Vermicelli Dry Fruit Cake.

Preparation & Cooking Time : under 30 mins.

Yield : 12 round pieces


Ghee/Butter - 1 tbsp.
Mixed dry fruit - 2 tbsp. Roughly chopped (I used almond and pistachio)
Dried Cranberries - 2 tbsp.
Vermicelli - 1 cup
Jaggery / Molasses - 2 tbsp. (Adjust sweetness as per your taste)
Water - 1/2 cup
Milk - 1/2 cup
Crumbled Paneer (Cottage cheese) - 2 tbsp
Cardamom Powder - 1/4 tsp.


  1. Heat half a cup of water in sauce pan.
  2. Add grated jaggery in water, stir it and simmer until dissolved completely. keep it aside.
  3. If you are using liquid molasses, skip above process and start your recipe from step no 4.
  4. Heat the ghee (Clarified butter) in pan, and add mixed dry fruit along with cranberries.
  5. Sauté for few seconds, and add vermicelli. Stir it and roast them together well on low-medium flame.
  6. Add jaggery water and milk into above mixture.
  7. keep stirring and cook for few minutes until mixture become thicken.
  8. Add crumbled paneer and cardamom powder in it and mix well.
  9. Once mixture become thick and ghee start to leave from sides of pan, cake mixture is ready.
  10. Serve hot just like that as halwa or proceed to mould it in cakes.
  11. Take one tbsp. of mixture and add it in to greased cookie mould. (I used a lid of spice jar.) Invert it in a parchment paper. Repeat it to make all cakes. Let it cool down completely.
  12. Alternatively you can set the mixture in a big greased tray. once cool down cut in square pieces.
  13. Keep it in refrigerator before serving. It tasted awesome next day when served chilled.


  • For variation add you favourite dry fruit - cashew, cherries, currants, dates, walnuts, hazelnuts, raisins etc.
  • To make it healthier I used molasses, you can use brown sugar, white sugar or condensed milk.
