Pakoda using rice makes a quick fix snacks when you have to welcome an unexpected guest. Just whip up all the ingredients that is available in the pantry with little innovation ahead to prepare a delicious, crispy snack. Rice is essential in all Asian homes and when eating rice is bored over a time, give a new look to the rice to make yummy pakoda. Variations are just up to individuals taste, here I tired my pakoda with very minimal and basic ingredients that were available in my kitchen.
This is another way to use up lots of leftover rice and don't forget to check my leftover rice patties recipe. You can add colorful chopped veggies and spinach while feeding to kids.  Luckily that turned out to a perfect for a evening snack to serve with tea.

Preparation & Cooking Time : 30 minutes

Yield :serves 4

Cooked rice - 1cup
Onion - 1 medium, chopped
Red chilli powder - 1/2 tsp
Cumin seeds - 1tsp
Besan/chickpea flour - 2 tbsp
Chopped coriander  - 3 tbsp
Asafoetida a pinch
Salt to taste
Oil for deep frying

  1. Mash the cooked rice well. To that add chopped onion, coriander, cumin seeds, red chilli powder, asafoetida. Mix well.
  2. Throw in 2 tbsp of besan or chickpea flour, this acts as a binding agent and give crispy touch to the pakoda. Add required salt to taste. Mix well.
  3. Heat oil for deep frying. Once the oil is hot enough to fry, pinch a small portion of the rice mixture from the bowl and drop in. Fill in the hot oil as much it can hold and deep fry until golden over medium heat. Do repeat the same procedure to finish up the batter in batches.
  4. Serve hot pakodas with tea.

      • The moisture from the rice and onion is enough to bind the ingredients, so no need to add water any more.
      • Go little ahead to make few variations like add handful of soaked sago, fresh / frozen vegetables.
      • If you have mint, throw the chopped mint and broken cashews. This makes the pakoda very flavorful.
      • Make sure to fry pakoda in hot oil to get crispy one.
