Baigan Bhartha

Baigan Bhartha also popular as "Ringna no Oro" in Gujarat. Enjoy this very popular north Indian Baigan Bhartha with Roti, khichdi and kadhi by making complete meal.

 YIELD –2 servings


Black Big Brinjal - 2 nos.
Onion - 1 big finely chopped
Tomato - 1 big finely chopped
Garlic- 2 pods finely chopped
Coriander leaves - 2 springs finely chopped
Cumin - 1/2 tsp
Mustard seeds - 1/2 tsp
Asafotedia - a pinch
Turmeric powder - 1 tsp
Chili Powder - 1 tsp
Amchur Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Salt as per taste
Oil - 2 tsp

  1. Wash the Brinjal and make a slit without halving and apply lil oil on the skin.
  2. Roast them direct on medium gas flame until its skin starts to remove.
  3. Take them off from flame and let it cool for some time and remove its skin. Chop it finely and keep aside.
  4. Heat the oil in a frying pan and add cumin and mustard seeds. When they start fluttering add hing, onion and garlic. Saute well.
  5. Add tomato and all other spices into it. cook well.
  6. Finally add mashed/chopped brinjal and coriander into it.
  7. Cook it for 5-7 mins unitl oil starts to leave. 
  8. Serve hot with roti or paratha. It suits very well with millet roti. (Bajra Rotla)
