Patra ~ A Famous Gujarati Snack

Steamed and seasoned leaf roll; made from Colocasia leaves rolled with specially prepared sweet, sour & spicy paste
Patra also called patarvelliya is a very popular Gujarati snack. It blends the taste of sweet, sour and spicy which makes it really tasty. some people like to directly fry them or some people steam it and season it or fry it. Try this reacipe and learn how to make homemade yummy patra.

Preparation Time: 30 minutes

Cooking Time : 45 minutes

YIELD : 4 persons


Colocasia Leaves(arbi leaf) - 10 leaves

For Besan Paste: (Read the Note Below)
Besan - 2 cups
Tamrind Paste - 3 tbsp
Grated Jaggery -  3 tbsp
Salt as per taste
Chili Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Oil - 1  tbsp
ginger-green chili paste - 1 tbsp
hing - a generous pinch 

For Seasoning:
Oil - 2 tbsp
Mustard seeds - 1 tsp
Sesame seeds - 1 tsp

For Garnishing:
Grated Coconut - 1 tsp
Coriander leaves 


  For Besan Paste:
  1. In a one cup of water add jaggery and mmix untill it melt properly. 
  2. In a large bowl combine all other ingredients, mix well. Add jaggery water, mix and make smooth thick paste. keep aside.
How to make Patra:
  1. Wash colocasia leaves and dry them properly with kitchen towel.
  2. On a clean dry surface, fold the leaves front side inside and veins are facing you.
  3. Cut the main big middle vein using sharp knife, and cut it in 2 parts. Remove other big veins too. Repeat this process for all the leaves. keep it aside.
  4. Place one leaf on surface, vein side facing you and apply and spread the besan mixture
    on the leaf properly. place other leaf on it and apply besan mixture on it. Place 3rf leaf and apple one more time besan mixture. ( more leaf layers will make bigger patras - i made 3 layers)
  5. Fold the leaf tightly to roll them. Apply besan paste on each fold.
  6. Repeat  the same process for other leaves. (step 4 & 5). You will get approx 8-9 rolls.
  7. Keep all the rolls in a steamer vessel. I used pressure cooker to steam cook and removed its pressure valve.
  8.  Steam cook them for 25-30 minutes. once done take out from steamer and let it cool down.
  9. Once cool down slice the rolls in circles.

  1. Heat the oil a pan, add mustard seeds and sesame seeds. let it splutter them and add patra in it.
  2. Toss them and cook for few minutes until they turn into light brown.
  3. Patra is ready. serve in a plate and garnish with grated coocnut and coriander.
  4. Serve hot with your fav chutney and tea/coffee.


Besan paste is very important and prominent in cooking patra. So dont make your fist tight while adding spices in besan paste...add Minimum amount of spices (Especially tamarind and jaggery) given above to get perfect taste. Test the paste before applying and add more if you wish.

The leaf really takes lot of time to cook properly so give them enough time to steam cook. else it will give raw smell and taste will not be authentic. if you are not so calorie consious you can fry them as well.
